The Story of Nuez Loca
I began experimenting with a keto lifestyle in 2016 while living out of country. At this time, and where I was located (on a island 7 km long and 650 meters wide!), there were NO ready made options. Many ingredients also involved a 3 hour commute by ferry and van. As the sweet smell of baking wafted through my open windows from my landlords bakery below, I knew I couldn't take it anymore. I needed bread. I needed cake. I needed something other than chicken and cabbage. Off I went on that 3 hour commute! Armed with a hot plate and toaster oven I took things into my own hands and started to create all the things I was desperately craving.
Fast-forward to 2019, and back in Canada, I began baking my creations for my friends and family to enjoy. Much easier with a real stove and oven! I was always told "you've got to sell this stuff!!", I had intentions, but never seemed to get around to it. Then Covid happened. I started playing around with more recipes and seriously started thinking about what I wanted my life to look like. Here I was, unexpectedly back in Canada, working at a job I hated, feeling trapped. One night at work, it was the final straw for me. I posted an ad on Facebook marketplace for my bagels that night with whatever picture I could find on my phone. Within a week I was working full-time during the day and baking full-time in the early mornings and late nights.
And here we are now in 2022. I LOVE my job - baking treats for all you wonderful people. I don't even miss living in paradise with a beach steps away from me - well maybe a bit on the -40 days. I have been serving up delicious gluten-free & keto goodies to Saskatoon since 2021 and wouldn't change that for the world!
I believe in top quality, imaginative and delicious food, and do my best to cater to the needs of each customers. I know what a struggle it can be to find quality items with dietary restrictions. Whether you’re looking for a sweet treat or craving carbs, I do it all. I try to bring you a variety of items that hit all the cravings. I offer seasonal menus, blending classic tastes and exciting new flavor profiles, limited time items, holiday items and some menu staples.
