Easy & quick low-carb, faux mashed potatoes.
Gluten-free, Keto, Nut-free & Sugar-free..
This super easy & quick recipe for cauliflower faux-tatoes will satisfy your carb cravings and is the perfect Thanksgiving side dish.
Makes approximately 6 servings.
1 head of cauliflower
1 tbsp. butter
2 tbsp. heavy cream
3 cloves garlic
50g cream cheese
1 tsp xanthan gum or arrowroot starch
1 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
60g mozzarella cheese (shredded)
Break cauliflower into small pieces and place into glass bowl with butter, cream & garlic cloves. Microwave for 6 minutes, stir to coat cauliflower with butter & cream, and microwave for another 6 minutes. Check larger pieces with a fork to ensure they are tender.
Place cauliflower & liquid into a blender or food processor with cream cheese, xanthan gum or arrowroot starch, garlic powder, salt & pepper. Blend until smooth. Add in mozzarella cheese and blend again. Let faux-tatoes sit about 10 minutes before serving.
Top with chives or extra butter if desired.
