Waffles

Quick & easy one-bowl waffles


gluten-free, low-carb, keto, nut-free, dairy-free


Soft, fluffy easy waffles ready in 10 minutes. Freeze extras and pop them in the toasted to reheat for a quick breakfast (or dinner) any day of the week.

Makes 2 waffles.

 

Ingredients

  • 3 tbsp coconut flour

  • 1/2 tsp xanthan gum

  • 1 tbsp sweetener of choice

  • 1/2 tsp baking powder

  • 3 eggs

  • 2oz cream cheese (room temperature)

  • 2 tbsp butter or coconut oil (melted)

  • 1/4 cup coconut cream, heavy cream or milk of choice

  • 1/2 tsp vanilla extract (or coconut extract for coconut waffles!)


1. Preheat your waffle maker.


2. Combine all ingredients in a blender and blend until smooth. If you do not have a blender, you can combine all ingredients in a bowl and whisk until smooth.


3. Add 1 cup (1/2 of your batter) to the waffle maker and cook until golden - approx. 5 minutes.

 

And that's it. Super easy! I opted for coconut oil & coconut cream in this recipe and swapped out the vanilla for coconut extract to create coconut waffles. I topped them with a mango pineapple reduction, shredded coconut and macadamia nut. Try adding in cinnamon, blueberries or chocolate chips to create different flavors.
